Day 5 - Soooooooeeeeeyyyyy! Pig, pig, pig!

Anyone who knows me knows that I have a passion for food.  I love to eat and I love to cook , but dinner time can be difficult for us because the kids don't usually like some of the things I make.What I mean by that is that they don't like it because they haven't even tried it. My kids are very picky eaters (yes, even Jared.  He eats a lot but there are definitely foods he will not eat.)    They are more of the burger, chicken strip, and pizza kids and the occasional Japanese or Chinese cuisine which consists again of deep fried chicken, shrimp, or pork along with rice.  So the last couple of days we have been eating some of my food concoctions.  I seared some pork late tuesday night and then slow cooked it in the oven for a good 9 hours.  The result was falling of the bone shredded pork.  I've been experimenting with some different salsa too this week so voila we have shredded pork tacos for dinner.  The first I made was a roasted Serrano and Tomatillo salsa.  It was a medium hot salsa consisting of the peppers, tomatillos, roasted garlic, roasted onions, and a few other seasonings.  Very tasty.  Well I still had some more pork today so I got in there and made another salsa with some diced tomatoes, green chilies, garlic, and a dried poblano pepper. The kids enjoyed the tacos as did my wife and Jared even ate some of the salsas.  Now I know that I've got another meal option for my picky eaters. 

More on the food front: I had lunch with a friend today.  We decided to go to T-bears Cafe because it was really close by and I had a lunch special with Meat Loaf, Mashed Potatoes, Green Beans, and a nice warm Biscuit. Getting home style food during the middle of the day is really nice and the even better thing is that it didn't cost me a thing.  Thank God for friends.   I really enjoyed T-bears and I think I will have to go back for some more so that I can do a review for my other blog.  I'll have to pack up my wife and kids and get them to try some of their food too so we can get the full experience. 

Tomorrow is Friday and I'm am so very glad that the week is almost up.  I'm so exhausted as this has been my third day training.  I never knew that training people while sitting at a desk all day could make me so tired but man I'm feeling it.
